Farmer Emmet's Easy Keto Meatballs
Even if you are not on the Ketogenic diet, you cans still enjoy these meatballs with your favorite pasta or a side of mashed potatoes while your "Keto" friends join you for these tasty nuggets with their veggie noodles or mashed cauliflower. They won't miss the carbs and neither of you will miss out on tasty meatballs!

Ingredients

  • (1 pound) Premium Ground Beef
  • (1/2 cup) almond flour
  • (1 cup) carrots, shredded
  • (1/2 cup) shredded cheddar cheese
  • (2 heaping tablespoons) Ossabaw lard or your preferred healthy fat
  • (3 - 4) cloves of garlic, finely minced
  • (1/2) onion, finely minced and sauteed
  • (2 tsp) Italian seasoning
  • (1/2 tsp) sea salt
  • (1/2 tsp) fresh ground black pepper
  • (2 tsp) sweet basil
  • (2 tsp) garlic and herb spice blend

Directions

DIRECTIONS

Mix all ingredients thoroughly and divide into 1/4 cup portions.  Shape into balls and place on a baking sheet or in a muffin tin.

Bake for 18 minutes, then remove from oven and drain any grease (there won't be much with our super-lean Eden Pure Beef!)

Add a glaze of your favorite tomato sauce if desired and return to the oven for another 5 minutes

Mini Meatball Option:

Make meatballs 2 tablespoons instead of 1/4 cup.  cook in mini muffin tins to help retain roundness. Serve with toothpicks as appetizers.
